Burgers with Chipotle Mayonnaise

INGREDIENTS
- 1/2 cup mayonnaise
- 1 chipotle pepper in adobo sauce
- 3/4 teaspoon adobo sauce
- 1/2 lime, juiced
- Salt and freshly ground black pepper
- 3/4 pounds ground chuck, 80/20
- Salt and freshly ground black pepper
- 4 slices Pepper Jack cheese
- 4 Orlando Pretzel Sandwich buns
- 1/2 small red onion, sliced
- 1/2 tomato, sliced
- Lettuce
INSTRUCTIONS
- Add mayonnaise, chipotle pepper, adobo sauce, and lime in a food processor and puree.
- Add salt and pepper to taste.
- Preheat grill to medium high heat
- Form the meat into 2 to 3-ounce portions, packed tightly. Season with salt and pepper.
- Place the burgers on the grill, about 4-5 minutes and then flip and cook another 4 minutes.
- When the burgers are almost done, top with desired cheese and close the grill to allow cheese to melt.
- Place the burgers on the Orlando Pretzel Sandwich Buns and top with chipotle mayonnaise. Add lettuce, tomato, and red onion, if desired.
